Bee honey, made by Apis mellifera from flower nectar.

Characteristics

  • It contains about 80% sugars, mainly fructose and glucose, and 17% water.
  • Its composition, colour and aroma depend on the flowers visited.
  • Being very concentrated, it keeps for a long time without fermenting.

Role in the preparation: Diluted in water, it gives preparations easily fermentable sugars.

Caution: Keep it out of reach of bees (honey of unknown origin is a health risk for apiaries); prefer local honey.
