Baker's yeast
Baker's yeast is a single-celled fungus, Saccharomyces cerevisiae, that ferments sugars and produces carbon dioxide.
Characteristics
- Reproduces by budding and ferments glucose, fructose and other sugars.
- Produces carbon dioxide and alcohol when fermenting.
- Rich in amino acids and B vitamins.
- Cited as a fermentation starter in biol and bokashi.
Role in the preparation: Acts as a fermentation starter, converting sugars from molasses or other sources.
Caution: Store in a cool, dry place, and do not seal containers in active fermentation airtight because of gas pressure.
